Amazing read! That moment you described when you rounded the corner to see the whole seascape near Les Sables-d'Olonne captures perfectly why bike touring beats every other way to travel. I had a simlar experience last summer outside Bordeaux when I came over a hill and saw vineyeards stretched out forever. The pacing insight is super important too and something I'm still learning,especially about knowing when to just lie in bed and not push through everything.
